Thriving Sichuan Cuisine

In the middle and late Qing Dynasty, Sichuan cuisine thrived. The top Baoxi Restaurant and acceptable Nantang Restaurant gathered many well-known chefs, who incorporated advanced techniques from various regions and combined them with Sichuan characteristics, improved cooking methods, and innovated a wealth of medium and high-end dishes with both light and strong flavors.
